One Happy Husband!

I love to try new recipes especially when they come pre-approved!  This weekend I tried a recipe for Cafe Rio's shredded pork.  Danny could not stop telling me how wonderful this meal was.  He broke out the enchilada sauce and toasted a tortilla up then he said all we need now are some black beans and we have the same dish just $20 cheaper.   It was good, but I think knowing he could save some money by making his own Cafe Rio burrito made it taste a lot better.  Give it a try it makes tons!  
Step One:
4 lbs. pork roast
2 Tbsp. brown sugar
2 tsp. crushed red pepper
2 tsp. salt 
2 tsp. cumin
2 cloves minced garlic
1 sliced onion
1 cup chicken stock
1 can Coke
Trim fat off roast.  Rub the brown sugar, red pepper, salt, cumin, and paprika over the roast, covering it completely.  Put in a crock pot.  Set temperature to lowest setting.  Add onion, garlic, chicken stock, and Coke.  Cook 8 hours.  A good time to prepare is the evening, just before bed.  Let it cook while you sleep.  (I did this, great idea then the meat soaks up the juices the next day)
Step Two:
Take pork roast out of Crock Pot and shred the meat.  While the meat is out add additional 2 Tbsp. Brown sugar and 2 tsp. Paprika to the crock pot.  Let dissolve.  Return meat to the crock pot and continue  to cook through the day.  
*Fix your own burrito or put it on a salad.  
** We think it is yummy, but tell me if it really is as good as Danny says, or if it is just the money he is saving!!!

We make a similar one that also claims to be the Cafe Rio brand. Under my favorites list is a blog titled "What's Cookin'" it has the recipe for chicken, the rice and the Cilantro Ranch dressing....now your husband will be even happier.

Wow, I can't wait to try this...Joe seems to have the same appreciation for food as Danny does! Can I assume the 1st dose of Paprika is also 2 tsp? It isn't listed with the other ingredients-
I'll let you know what New York thinks of it!
